Demeter Alpine raclette cheese by Nicolas Mottier
Last September, we produced a new raclette cheese with herbs, made of raw, whole cow's milk. A combination of new ingredients: Basil, Pepper, Bear's Garlic, and plain.
This Demeter raclette cheese was made over an open wood fire at the Pâquier-Mottier mountain pasture during the summer period from the raw milk of 35 pure Simmental cows.
Every season we try to be creative and test new flavours and ingredients.
