Let me introduce myself: I am the Holistic Restaurant, an eclectic space where gastronomy and living together meet in perfect harmony. Here, modernity and tradition blend seamlessly in a warm, inviting atmosphere, adorned with upcycled furniture and objects. My Murano glass chandelier connects heaven and earth through a glass opening, offering a view of the stable and the Crystal Cellar. The welcoming diversity of spaces invites visitors and guests to indulge in holistic cuisine, crafted from organic, seasonal produce, wild and medicinal plants. I encourage inclusivity by offering craft spaces, fostering intergenerational connections within a vibrant community.
The restaurant is much more than just a dining venue: it is a true culinary crossroads and a space for meaningful exchange.
Upon arrival, guests are greeted by a bright and welcoming atmosphere. The interior, both modern and minimalist, is adorned with furniture in soft, natural hues. Emphasis is placed on recycling and reusing, with many pieces of furniture and objects given a second life, available for purchase. Part of the flooring features Moroccan cement tiles in shades of brown, taupe, and beige. These handcrafted Moroccan tiles support artisans who meticulously produce each piece, with every tile featuring the Flower of Life motif.
The centerpiece of the room is a radiant Murano glass chandelier, created by local artist Aristide Najean, connecting heaven and earth through a vertical glass opening. This chandelier extends from the top of the hotel down to the restaurant. The glass openings provide views downward into the stable and upward into the upper floors. This eclectic decor creates a warm ambiance where modernity and tradition blend seamlessly.
Tables arranged around the central chandelier accommodate up to 80 diners, inviting them to savor organic, regional, and seasonal cuisine while encouraging interaction and new connections. Some glass-topped tables offer views into the stable with cows below, adding a touch of life to the dining experience. After the meal, guests can continue conversations at the dishwashing bar or the milk bar. Indeed, we offer a unique experience at the dishwashing bar, where everyone can wash their own dishes or those of others, fostering a sense of community and mutual support among restaurant guests.
The space is also designed to support and promote inclusivity for all, particularly children and the elderly, and to create intergenerational connections. The goal is to build a living puzzle of three different generations.
A play area with wooden toys is provided to entertain children while their parents enjoy their meals. Cradles for babies are also available. The restaurant ceiling is designed to accommodate hammocks or a swing, and isolated rest areas are available for everyone.
A craft and activity area includes a loom, embroidery, knitting, and lace-making zones, creating various spaces for local artisans, seniors, and visitors to gather around a table and engage in these activities.
A nearby library features niche-shaped tables where guests can comfortably settle in to read.
